Instant Oats Dosa and Capsicum menaskai!
Ingredients:
For the oats dosa
1 cup oats
1/2 cup rice flour
1/2 cup rava
1/2 cup vegan yogurt
1/2 tsp cumin seeds
salt to taste
Ingredients for the Menaskai
1large capsicum
1 green tomato
1tablespoon peanuts (soaked in water for an hr or 2)
2 tsp sesame seeds (til) 1tsp cumin seed
1tsp coriander seed 3 red chillies(as per your taste)
1/4tsp turmeric powder
Piece of jagery
2 tablespoon Coconut grated
Salt to taste
Method:
Finely chopped green chillies, onion, coriander leaves. Grind the oats in in to a fine powder. Mix all the above ingredients, add water as needed to make a batter. Heat the dosa tawa and pour the batter and fry evenly on both sides, enjoy the hot dosas with the yummy Capsicum menskai, it is a lovely combination!
Cut the capsicum and green tomato in to 2inch pieces and keep it aside. Dry roast sesame seeds(til), coriander seeds, cumin seeds, red chillies. Grind the dry roasted ingredients with the coconut. Heat the oil in a pan make a seasoning of mustard seeds curry leaves and a pinch of asafoteida. Add the cut capsicum, tomato and the peanuts, saute it for few minutes. Then add the tamarind paste piece of jagery, salt, and turmeric powder. Boil it for few minutes then add the masala and slow cook it.
