Tofu Bhurji

Ingredients:

1 block of firm tofu

1 onion, chopped

4 cloves of garlic, minced

2 tomatoes chopped

ยฝ cup chopped coriander leaves

2 green chilies chopped

1 tsp cumin seeds [rml_read_more]

1 tsp coriander powder

ยฝ tsp haldi

ยฝ tsp red mirchi powder

ยฝ tsp kala namak

salt to taste

Method:

  1. Press the tofu: put the block of tofu between two heavy plates and let sit for 30 min so most of the water drains out
  2. Heat some oil on a tawa, add the cumin seeds, wait until they start sizzling
  3. Add the onions, cook until they are light brown, then add garlic and green mirchis, cook for 1 min
  4. Now add the tomatoes and cook until the oil separates out
  5. Add the powder spices and cook for 30 sec
  6. Now youโ€™re ready to add in the tofu, sautee for a few minutes until it has absorbed all the delicious flavors
  7. Serve hot with whole-grain chapati or whole-grain toast. Some fresh onions and lemon juice are a nice garnish!
