This is a wonderful festive dish to make and tastes just as good as it looks.
Ingredients
2 1/2 c all-purpose flour
1/4 t baking soda
1/4 t salt
1 c unsalted butter
3/4 c sugar
1T flaxseed powder
1 t vanilla extract
1/2 c jam (e.g. raspberry, strawberry, guava)
1 T powdered sugar
Method
Preheat oven to 350F. Mix flour, baking soda, and salt in a dry bowl. In a stand mixer (preferably, or a food processor if you don’t have a stand-mixer), combine the vegan butter and sugar and mix for about 2 mins. till light and fluffy. Slowly add the flaxseed and vanilla and mix for about a min. Turn the mixer on low and slowly add the dry ingredients. Stop it as soon as it has been combined. Take the dough out, put some plastic wrap and chill in the fridge for at least an hour.
Pinch and roll the dough into small balls. Using your thumb, press into each cookie and make a dent in it and make it a bit flatter. Fill the center with jam. Bake for about 15 mins (or untill golden brown). Cool the cookies for 10 minutes, then place them on a wire rack (as shown) and dust with powdered sugar. Yummmy!!
