Inherently #vegan Konkani food series (there are so many!) — number one is a family favourite: Batata upkari, aka potato stir fry. Super easy, super healthy, and a great last minute addition to any meal in a pinch! Kids love it too- my boys call it Konkani “French fries” ?. And please don’t be afraid of the potato- remember that it is full of healthy nutrients including fibre, vitamin C, vitamin B6, potassium, and believe it or not, a great source of #plantbasedprotein!
recipe:
—3 potatoes, washed and julienned
—3 dried red chillies
— 1tbsp mustard seeds
— 1/2 tbsp urad dal
— 1 tsp coconut oil
— generous pinch hing (asofaetida)
— handful fresh curry leaves
— salt to taste
— small handful fresh coconut
Heat coconut oil, add mustard seeds
When they sputter, add curry leaves (and stems for flavour!), hing, chillies, urad dal
When urad dal starts to brown, add potatoes
Turn down heat, cover, add small amount of water, and allow potatoes to cook fully
Garnish with coconut and serve hot!
