Sprinkle vegan pork with rosemary, salt and pepper. Pan sear to “doneness” you like. Keep aside but warm. To the same pan add some oil, dijon mustard and chopped fresh tomatoes. Fry 1-2 mins till the tomatoes just barely soften. Add brandy and reduce flame. Wait till brandy evaporated. Add the mixture on top of the vegan pork and serve as suggested.
