Recipe:
2 cups peas
2 Tbsp besan
1 Tbsp chopped ginger
4 green mirchies chopped
1 Tbsp olive oil
1 Tbsp jeera seeds
1 Tbsp whole dhania/crushed
pinch hing
1 tsp kali miri/crushed
1 tsp salt
1 tsp garam masala
1 tsp red mirchi powder or to taste
1 tsp amchoor powder or lemon juice
2 cups atta
4 Tbsp olive oil or melted vegan butter
1/2 tsp baking soda
1/2 tsp salt
1/2 cup water
–combine last 5 ingredients to form dough–> knead for 10 minutes
— boil peas for 10 minutes and mash when cool
— heat olive oil, add dhania, jeera, hing
— after jeera becomes dark brown, add besan
— now add peas, green mirchi, ginger–> cook for 2 min
— add remaining powdered spices. Filling is now finished
— to make kachori, roll a Tbsp size atta piece and stuff with 1/2 tbsp of filling, roll back out again until about 1/2 inch thick
`– preheat airfryer to 180C
— cook kachoris first for 7 min, dry.
— then spray lightly with oil and cook for 5-7 more minutes until golden brown
— serve hot and crispy!
