When I feel too bored to cook up an elaborate meal (that is not too rare) I prepare this green pulao as it is fast to cook and delicious to eat. A simple rice dish with many vegetables that can be eaten with vegetable raita,boondi raita papad and/or pickle.
Ingredients:
– 1 1/2 cup Basmati rice(need not be the long-grained variety)
– 1 big onion-sliced
– green chutney
– pepper corns.
– 6 cloves-2 dalchini-small piece elaichi (cardamon)
– 1 tej patta
-1 star anise
-1 jeera
-1 tsp oil
Add the vegetables given below in small quantities- cauliflower flowerettes carrot-chopped shelled green peas sweet corn kernels one small potato-quartered beans.
Method:
For the green chutney-grind together (with a little water) into a fine paste half a cup of coriander and a few mint leaves, 6 green chillies,one clove,4 pepper corns,small piece of dalchini and 1 elaichi (cardamon)
This is easiest if prepared in a pressure cooker. In a pressure cooker heat oil and add the dry garam masala (i.e. pepper corns,cloves,dalchini,cardamon,star anise and jeera) Add the sliced onions and saute till they are slightly golden brown. Add the rice(previously washed and drained) and saute. Add the vegetables and the tej patta. Add the ground green chutney and mix well. Add 3 cups water and salt as per taste.Close the pressure cooker and cook for about three whistles. Wait for a few minutes and open the cooker and help yourself to simple but delicious green pulao.
