One of the quickest desserts to prepare and tastes just amazing. More so if you love chocolate!
Ingredients:
– 250g of good quality vegan semi-sweet/bitter chocolate
– 4T water
– 2T orange liqueur (e.g. Grand Mariner)
2T vegan butter
2T ground flaxseeds, soaked [rml_read_more]
6T cashew cream
1/4 t cream of tartar
3T sugar, powdered
Method:
Heat the chocolate and water on low heat till it melts. Add to it the orange liqueur and butter. Let it cool. Whip the egg yolks till creamy. Add 1/3rd of the room temperature chocolate mix to it and mix it in gently. Add the next 1/3rd and fold it in. Once it has been folded in, add the rest and do the same. Set aside. Whip the heavy cream till it forms soft peaks and do the same process of mixing it with the chocolate mix.
In a clean, grease-free bowl (very important!) whip the flaxseeds with the cream of tartar till stiff peaks form. Blend the sugar into it gently till the peaks are glossy. Do the same blending method as above with the chocolate mixture (1/3rd at a time). Gently scoop the final product into ramekins in a circular motion and chill for at least 2 hours. Serve with a dollop of creme fraiche or sour cream and orange zest/peel.
