This is a typical Konkani dish. Sukke in konkani means dry. So as you are making this dish, try to add as little water as possible for best taste.
Ingredients:
2 cups of jackfruit (best to use fresh cut)
1 cup grated coconut
5-6 red cyanne peppers
1 tsp coriander seeds
1/2 tsp feugreek seeds (optional)
1 tsp tamarind
1 tsp mustard seeds
5-6 curry leaves
Method:
Coarse grind coriander seeds, tamrind, fenugreek seeds, coconut and red peppers. Meanwhile cut jackfruit into bite sized pieces and smash them using a mortar and pestle.
In a frying pan add oil and once the oil is hot, add mustard seeds quickly cover with a lid. Wait 30 seconds or till they stop popping. Add curry leaves and repeat. Add the ground masala (spice mixture) to this and fry for a few minutes. Add jackfruit and add a table spoon of water to evenly coat the jackfruit with the masala. Cover and cook on medium-low heat for 10-15 mins. Uncover and continue stirring and cooking for 5 more minutes on medium heat.
Serve with daal (preferably daalitoy; recipe coming soon!) and rice.
